Reel Food: Fresh Strawberries And Cream Mini Cake

Need a great dessert for your movie marathon watch party but want something more than normal movie concession-like food?

This strawberries and cream mini cake is actually a kitchen hack because all you’ll need is about 10-15 minutes of your time, some store-bought ingredients, and you’re good to go! Impress your family and friends with this and they will think you spent hours slaving in the kitchen for this!

I have also included four musical movie parings to go with it if you need some inspiration.

Fresh Strawberries and Cream Mini Cake

About 1 cup fresh strawberries

1 small loaf pound cake (do not use chiffon because it will cave in under the strawberries and cream)

2/3 cup heavy whipping cream (or use the ready-made one in cans)

½ cup honey

2-3 tablespoons powdered sugar for décoration

Check that you got all the ingredients. You can shop a few days in advance and simply keep everything in the refrigerator for when you need it.

Whip the cream. About 4 minutes on stand mixer high setting.

Slice the strawberries into 1/8th inch slices. This will make them lay on top of the cream better for easier layering.

Slice the pound cake into 1/3 to ½ inch rectangles or squares. To make it prettier, you can scrape or slice off the browned bits as well. You will need at least 3 rectangle slices.

Assemble the cake by layering the pound cake, 1 tablespoon of honey, and enough whipped cream to cover that layer.

Arrange strawberry slices over it.

Repeat until you got 3 layers. Drizzle extra honey on top and sprinkle with icing sugar to make it look yummier.

There you have it, a delightful fresh-tasting mini cake for every occasion!

You can make this a few hours in advance and place in the coldest part of your refrigerator (not freezer).

Enjoy! This serves 2.
